You can make cod shine with just a few simple ingredients, which is why it’s such a great beginner fish. Why cod? Because it’s accessible almost everywhere. It’s familiar, forgiving, and ready to work with you. But, once we learn some basic fish work we can work into the classics with cod, fish and chips anyone?

This oven-roasted cod is a great place to start. It works year-round. It’s healthy, satisfying, and easy enough for a weeknight, but still feels special when you set it down on the table. The techniques here apply to most fish. Salmon, branzino, sea bass. The point isn’t just cod. The point is getting you comfortable cooking fish at home.

I know fish can feel intimidating, but it’s one of my favorite proteins to cook because it’s easy and it’s fast. Blink and it’s done. That’s part of the beauty. PLUS, it is so good for you - our skin, our muscles, our brain.

This recipe is built around ingredients I almost always have on hand: lemon, fresh herbs, garlic, cherry tomatoes, and olive oil. Nothing too complicated. Nothing precious.
